Ingredients
- 1 Litre chicken stock
- 4 Carrots, chopped
- Onion, chopped
- 2 Garlic chopped
- 2 Tomatoes
- Lentils (Puy lentils style)
Method
In a large saucepan add some olive oil then onion,carrot,garlic – not too high on the heat.
When soft add the lentils and chicken stock and simmer for 30 minutes. Bring chicken stock to the boil and add carrots, celery, onion and tomatoes and then simmer for another 30 minutes. Process in blender. Season to taste.
