Ingredients
- Salt and pepper
- 4x Beetroots Quartered and peeled
- 1x Leek roughly chopped
- 1x carrot roughly chopped
- 2x small potato roughly chopped
- 1xOnion roughly Chopped
- Few Bay Leaves
- 1.5L Veg stock
- Parsley
- 2xtbs of Natural Yoghurt
Method
Bring all vegetables to a boil, simmer for 45 Minutes
Cool it down, blend it, add your yoghurt and parsley
