Bills Organic Bakery
At Bill’s we’ve made it our mission to produce a bread that has great taste and is good for you. Our breads are baked from the finest Certified Organic stoneground flour, sunflower oil, psyllium husks, sea salt and filtered water.
Our Certified Organic flours (ACO certification 257P) are stoneground, a slower, older method of milling which avoids overheating and dehydration. Nutrients and wheat germ are retained, giving that nutty flavour.
Our unique sourdough culture was developed from scratch in the Wattagan Mountains near Newcastle. The slower 18-hour fermentation allows the dough to rise and the beneficial lactobacilli (which helps digestion) to fully develop, producing that unique flavour that can be obtained no other way.
Our Certified Organic stoneground sourdough breads have:
- No added yeast
- No dairy products
- No chemical herbicides or pesticides
- No artificial preservatives, flavouring or colouring
- No genetic modification
- No added sugar
- No animal products

Bill’s Certified Organic Stoneground Hi Fibre Sourdough—620g loaf and 770g loaf
Ingredients: Australian Certified Organic stoneground unbleached wheat flour, filtered water, sunflower oil, psyllium husks and sea salt. Can be ordered sliced or unsliced. The closest to a “white bread” you will get in an organic sourdough loaf
Bill’s Certified Organic Sourdough 100% Wholemeal—620g loaf
Ingredients: Australian Certified Organic stoneground unbleached 100% wholemeal wheat flour, filtered water, kibbled wheat, sunflower oil, psyllium husks, lecithin (soy) and sea salt. Can be ordered sliced or unsliced. This 100% Wholemeal loaf contains the whole of the wheat, including the wheat germ.
Bill’s Certified Organic Sourdough Medium Rye—620g and 770g loaf
Ingredients: Australian Certified Organic stoneground unbleached wheat and rye flour, filtered water, kibbled wheat, sunflower oil, psyllium husks and sea salt. Can be ordered sliced or unsliced. A delicious Continental style loaf.
Bill’s Certified Organic Sourdough Multigrain—620g loaf
Ingredients: Australian Certified Organic stoneground unbleached wheat flour, filtered water, seeds and grains – 16% (linseed, sunflower, kibbled what, kibbled rye, oat groats, barley grains), sunflower oil, psyllium husks and sea salt. Can be ordered sliced or unsliced. Our Multigrain Sourdough is great for diabetics (low GI and low carbohydrates).
Bill’s Certified Organic 100% Sourdough Spelt —620g loaf
Ingredients: Australian Certified Organic stoneground Spelt flour, filtered water, sunflower oil, psyllium husks and sea salt. Can be ordered sliced or unsliced. Spelt is an ancient grain, a relative of wheat. It is well tolerated by many people who have wheat sensitivities. Higher in amino acids, fibre and vitamins.
Bill’s Certified Organic Sourdough Fruit Loaf 660g
Ingredients: Australian Certified Organic stoneground unbleached wheat flour, filtered water, sultanas, raisins, apricots and figs, sunflower oil, psyllium husks and sea salt.
A delicious mixture – sourdough and dried fruit.
